These Monster Eyeball Deviled Eggs are a fun, spooky twist on a classic appetizer. With a vibrant green filling and a ‘bloodshot’ paprika effect, they’re perfect for Halloween parties and guaranteed to be a crowd-pleaser.

Ingredients

Scale
  • 12 large eggs (room temperature)
  • 1/3 cup mayonnaise (Duke’s or Hellmann’s recommended)
  • 1 tablespoon yellow mustard (or Dijon for sharper flavor)
  • 1 teaspoon white vinegar (or apple cider vinegar)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • Green food coloring (gel preferred, about 4-5 drops)
  • Smoked paprika (for garnish)
  • Optional: Black olives, pimentos, or small capers (for pupil); chives or green onion (for veins)

Instructions

  1. Place the 12 large eggs in a single layer in a large saucepan. Cover with cold water by about an inch. Bring to a rolling boil over high heat. Once boiling, cover the pot, turn off the heat, and let the eggs sit for exactly 12 minutes. Prepare an ice bath.
  2. After 12 minutes, use a slotted spoon to transfer the eggs to the ice bath. Let cool for at least 5 minutes. Tap each egg on the counter to crack the shell, roll between palms, and peel starting from the wider end under cold running water.
  3. Pat peeled eggs dry. Slice each egg in half lengthwise with a sharp paring knife. Gently pop out the yolks into a medium mixing bowl. Arrange egg white halves on a serving platter, cut-side up.
  4. Mash the yolks with a fork until fine and crumbly. Add 1/3 cup mayonnaise, 1 tablespoon yellow mustard, 1 teaspoon white vinegar, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon garlic powder (if using). Mix until smooth. Add green food coloring drop by drop, stirring thoroughly, until you reach a vibrant electric green (about 4-5 drops of gel).
  5. Spoon the green yolk mixture into a piping bag fitted with a star tip, or into a zip-top bag with the corner snipped off. Pipe the filling into each egg white half, mounding it slightly.
  6. Sprinkle a generous pinch of smoked paprika over each filled egg to create a ‘bloodshot’ effect. Optionally, place a small piece of black olive, pimento, or caper in the center for a pupil.
  7. Cover the platter loosely with plastic wrap and refrigerate for at least 30 minutes before serving. Serve chilled or at room temperature, but do not leave out for more than 2 hours.

Notes

For easiest peeling, use eggs that are a week or two old. Start with a tiny drop of food coloring and add more gradually. The filling can be made a day ahead and stored in the piping bag in the fridge. Do not freeze deviled eggs.
