Best Easy One-Bowl Banana Bread (No Mixer!)

This incredibly moist and tender banana bread comes together in one bowl with no mixer needed. It’s a simple, reliable recipe that uses ripe bananas and melted butter for a perfect crumb every time.

  • 3 medium ripe bananas (about 1 ½ cups mashed)
  • ⅓ cup (75g) unsalted butter, melted
  • ½ cup (100g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup optional mix-ins (chocolate chips, walnuts, pecans, dried cranberries)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper or lightly grease with non-stick spray.
  2. In a large mixing bowl, mash the bananas with a fork until mostly smooth (a few lumps are fine).
  3. Add melted butter, sugar, egg, and vanilla extract to the mashed bananas. Whisk until well combined and smooth.
  4. Sprinkle flour, baking soda, and salt over the wet mixture. Gently fold with a spatula or wooden spoon until just combined (do not overmix).
  5. If using mix-ins, gently fold them in. Reserve a few to sprinkle on top if desired.
  6. Pour batter into prepared loaf pan and spread evenly. Sprinkle reserved mix-ins on top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The top should be deep golden brown and cracked.
  8. Let cool in the pan for 10 minutes, then lift out using parchment paper and transfer to a wire rack to cool completely. Serve warm or at room temperature.

Notes

For best results, use very ripe (heavily spotted or brown) bananas. If using a glass loaf pan, reduce oven temperature by 25°F. To bring a cold egg to room temperature, place it in warm water for 5 minutes. Store leftovers in an airtight container at room temperature for up to 4 days. Freeze for up to 3 months.
