  • 16 ounces cream cheese, softened (450g)
  • 1 cup Frank’s RedHot Original Cayenne Pepper Sauce (240ml)
  • ½ cup ranch dressing (120ml)
  • 1 cup blue cheese crumbles (120g)
  • 1 cup shredded mozzarella cheese (120g)
  • ½ cup shredded cheddar cheese (60g)
  • 2 tablespoons unsalted butter (28g)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • Optional garnish: fresh chives or green onions, chopped

Instructions

  1. Shred the chicken. If using rotisserie chicken, remove skin and bones, then shred with two forks. If starting with raw chicken breasts, poach them first: place in a pot, cover with water, bring to a boil, then reduce to a simmer for 15-18 minutes until cooked through. Let cool slightly, then shred.
  2. Soften the cream cheese. Take it out of the fridge about 30 minutes before starting. Cut into 1-inch cubes to speed up softening. If short on time, microwave in 10-second bursts until just soft—not melted.
  3. Combine the cream cheese base. In a medium mixing bowl, add the softened cream cheese, ranch dressing, garlic powder, and onion powder. Stir until smooth and well combined.
  4. Layer the ingredients in the slow cooker. Spread the shredded chicken evenly across the bottom. Dollop the cream cheese mixture over the top. Pour the Frank’s RedHot over everything. Sprinkle the shredded mozzarella and cheddar cheese on top. Add the butter, cut into small pats. Do not stir yet.
  5. Cook on low. Cover and cook on low for 2 to 3 hours. After 1½ hours, give it a good stir to incorporate all ingredients. Continue cooking for another 30 to 60 minutes, stirring once more, until hot, bubbly, and smooth.
  6. Add the blue cheese crumbles. About 15 minutes before serving, stir in ¾ cup of the blue cheese crumbles. Reserve the remaining ¼ cup for topping.
  7. Garnish and serve. Transfer the slow cooker to your serving area (keep on warm setting). Sprinkle remaining blue cheese crumbles on top, followed by chopped chives or green onions. Serve immediately with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

For best texture, ensure cream cheese is truly softened. Use Frank’s RedHot specifically for authentic buffalo flavor. Do not overcook; after 4 hours dairy may separate. Stir halfway through cooking. For a milder dip, start with ¾ cup hot sauce. Leftovers keep in refrigerator for up to 4 days and can be frozen for up to 3 months.
