A light, fruity, and alcohol-free classic English Pimm’s Cup mocktail featuring fresh strawberries, cucumber, mint, and a splash of sparkling ginger ale or water. Perfect for summer gatherings and easy to prepare in under 10 minutes.

Ingredients

  • Fresh strawberries, hulled and sliced
  • Cucumber, thinly sliced
  • Fresh mint leaves, a small handful
  • Lemon juice, freshly squeezed (about 2 tablespoons)
  • Orange juice, freshly squeezed (about 1/4 cup)
  • Non-alcoholic ginger ale or sparkling water (about 2 cups)
  • Simple syrup (optional, start with 1 tablespoon)
  • Ice cubes
  • Orange slices for garnish

Instructions

  1. Rinse the strawberries and cucumber under cold water. Hull and slice the strawberries into halves or quarters. Thinly slice the cucumber into rounds about 1/8 inch thick. Set aside.
  2. In a large pitcher, add the fresh mint leaves. Using the back of a wooden spoon, gently press down on the mint to release its oils without shredding the leaves.
  3. Squeeze in the juice of one lemon (about 2 tablespoons) and one orange (about 1/4 cup). Stir gently to combine the citrus flavors with the mint.
  4. Add the sliced strawberries and cucumber to the pitcher. Pour in simple syrup if desired (start with 1 tablespoon), then stir gently to combine all flavors.
  5. Fill the pitcher halfway with ice cubes to keep everything chilled. Slowly pour in 2 cups of ginger ale or sparkling water, stirring lightly to blend.
  6. Add a few orange slices on top for garnish. Serve immediately in tall glasses filled with ice, ensuring each glass gets some fruit and a sprig of mint.

Notes

Do not over-muddle the mint to avoid bitterness. Use fresh, ripe fruit for best flavor. Chill ingredients before mixing if possible. Add sparkling water or ginger ale just before serving to keep fizz lively. Adjust sweetness with simple syrup to taste.
