A cool, tangy, and refreshing hibiscus agua fresca with a zing of lime and subtle warmth from fresh ginger. Perfect for sunny afternoons or as a hydrating pick-me-up.

  • 1 cup (about 30 grams) dried hibiscus flowers (jamaica)
  • 1 to 2 inches fresh ginger root, peeled and sliced
  • Fresh lime juice from 2 medium limes (about 1/4 cup or 60 ml)
  • 1/2 cup (100 grams) granulated sugar
  • 6 cups (1.5 liters) water, divided
  • Ice cubes for serving (optional)

Instructions

  1. In a medium saucepan, combine 4 cups (1 liter) of water, dried hibiscus flowers, and sliced ginger. Bring to a boil over medium-high heat.
  2. Once boiling, reduce heat to low and let it simmer gently for 15 minutes.
  3. Remove the pot from heat. Using a fine mesh strainer, pour the hibiscus and ginger liquid into a large pitcher. Press gently on the petals and ginger slices to extract as much flavor as possible. Discard the solids.
  4. While the liquid is still warm, stir in 1/2 cup (100 grams) of granulated sugar until completely dissolved.
  5. Once the sweetened hibiscus brew has cooled slightly, stir in the fresh lime juice (about 1/4 cup or 60 ml). Taste and adjust sweetness or lime as desired.
  6. Add the remaining 2 cups (500 ml) of cold water to the pitcher to lighten the concentrate. Refrigerate for at least 1 hour, or until thoroughly chilled.
  7. Pour the chilled agua de jamaica into glasses filled with ice cubes. Garnish with a lime wedge or a small slice of fresh ginger if desired.

Notes

If ginger flavor is too strong, reduce the amount or remove slices earlier during simmering. Sugar dissolves best in warm liquid, so stir it in while warm. Fresh lime juice is essential for bright acidity. Chill well before serving. Variations include adding mint, orange juice, cinnamon stick, or substituting sugar with honey or agave syrup. For a sugar-free version, use stevia or erythritol cautiously.
