  • 34 cups (360-480g) powdered sugar, sifted
  • ½ cup (45g) unsweetened cocoa powder
  • 46 tbsp (60-90ml) whole milk or heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt
  • Edible gold luster dust
  • 23 tbsp (30-45ml) clear vanilla extract or vodka
  • Fine paintbrush (dedicated to food use)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan lightly with butter or non-stick spray and line with parchment paper.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt. Stir to combine evenly.
  3. In a separate bowl, beat eggs, then add milk, vegetable oil, and vanilla extract. Whisk until smooth.
  4. Slowly add wet ingredients to dry ingredients, stirring well. Carefully pour in boiling water and stir gently until smooth. Batter will be thin.
  5. Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Let cake cool in pan for 15 minutes, then transfer to a cooling rack to cool completely.
  7. Beat softened butter in a mixer on medium speed until creamy (about 2 minutes). Gradually add powdered sugar, cocoa powder, vanilla, and salt. Alternate adding milk or cream to reach desired consistency.
  8. Trim cake edges slightly to create a rounded football helmet shape. Use an offset spatula to smooth and carve the shape.
  9. Apply a thin crumb coat of frosting to seal in crumbs; chill for 20 minutes. Add a second, thicker layer of frosting, smoothing and creating helmet ridges and details.
  10. Mix edible gold luster dust with clear vanilla or vodka to create paintable liquid. Using a fine paintbrush, carefully add gold trim accents to helmet edges, face mask, and logo areas. Let dry completely before serving.

Use room temperature eggs and butter for better mixing. Sift dry ingredients and powdered sugar to avoid lumps. Add boiling water to bloom cocoa powder for moist cake.
