  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 4 hamburger buns, lightly toasted
  • Optional toppings: slices of cheddar cheese, lettuce, tomato, pickles, ketchup, mustard, mayo
  • 4 large russet potatoes
  • Vegetable oil or peanut oil for frying (about 4 cups / 1 liter)
  • 1 teaspoon salt
  • Optional seasoning for fries: ½ teaspoon garlic powder or smoked paprika

Instructions

  1. Peel potatoes if desired, or leave skin on. Cut into ¼ inch thick sticks. Rinse in cold water and soak for 30 minutes to 2 hours.
  2. Drain and pat fries dry thoroughly with towels.
  3. In a large bowl, combine ground beef, diced onion, minced garlic, Worcestershire sauce, smoked paprika, salt, and black pepper. Mix gently by hand.
  4. Divide mixture into 4 equal portions and shape into ¾ inch thick patties. Make a small indentation in the center of each patty with your thumb.
  5. Preheat grill to medium-high (about 375°F). Heat oil in deep-fryer or pot to 325°F for first fry.
  6. Fry potatoes in batches for 3-4 minutes until soft but not browned. Drain on paper towels.
  7. Grill burgers 4-5 minutes per side for medium doneness. Add cheese slices during last minute if using. Avoid pressing patties.
  8. Increase oil temperature to 375°F. Fry potatoes again in batches for 2-3 minutes until golden and crispy. Drain and season immediately.
  9. Lightly toast hamburger buns on grill for 1-2 minutes. Assemble burgers with desired toppings and serve with fries.

Notes

Use a thermometer to maintain oil temperature for fries. Make a thumb indentation in patties to prevent puffing. Double-frying fries ensures perfect crispiness. Avoid pressing burgers on the grill to keep them juicy. Soak fries to remove starch and dry thoroughly to prevent oil splatter.
