Ingredients

Scale
  • 1 lb ground turkey (lean, organic preferred)
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1/4 cup breadcrumbs (regular or gluten-free)
  • 1 large egg, beaten
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • Mini slider buns or small pita pockets (about 8 buns; whole wheat or regular)
  • 1 cup strawberries, hulled and thinly sliced
  • 1 cup blueberries (fresh or thawed if frozen)
  • Optional: 1 tbsp honey or agave syrup
  • Optional toppings: leafy lettuce or baby spinach, sliced cheese (cheddar or mozzarella), ketchup or mayo

Instructions

  1. In a large bowl, combine ground turkey, finely chopped onion, minced garlic, breadcrumbs, beaten egg, smoked paprika, salt, and pepper. Mix gently until just combined.
  2. Divide the mixture into 8 equal portions. Roll each into a ball, then flatten to about 2.5 inches in diameter.
  3. Wash and dry strawberries and blueberries. Slice strawberries thinly and use a star-shaped cookie cutter to cut out stars. Arrange blueberries as little stars or use whole.
  4. Heat olive oil in a non-stick skillet or grill pan over medium heat. Cook patties for 4-5 minutes on the first side without moving, then flip and cook another 4-5 minutes until internal temperature reaches 165°F (74°C).
  5. Lightly toast the mini buns or pita pockets on the pan during the last couple of minutes of cooking.
  6. Assemble sliders by placing turkey patty on bun, adding lettuce or spinach, cheese slice, and a dollop of ketchup or mayo. Top with the other half of the bun and serve with fruit stars.

Notes

Do not overmix the turkey to keep patties tender. Use a meat thermometer to ensure patties reach 165°F for safety. Rest patties a few minutes after cooking to redistribute juices. If patties brown too quickly, lower heat and cover pan briefly. Fruit stars can be made with a knife if cookie cutters are unavailable. For gluten-free, use almond flour or gluten-free crackers instead of breadcrumbs. Frozen berries can be used after thawing.
