  • 2 tbsp tomato paste
  • 1/4 cup water (60 ml)
  • 8 small soft flour tortillas
  • 1 cup shredded cheddar cheese (100 g)
  • 1 cup fresh lettuce, shredded
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup mild salsa
  • Sour cream (optional, for serving)

Instructions

  1. Prep your ingredients (10 minutes): Rinse and shred the lettuce, halve the cherry tomatoes, and finely chop the onion and garlic. Set toppings aside in small bowls for easy access.
  2. Heat the skillet (2 minutes): Warm 1 tablespoon of olive oil over medium heat until shimmering but not smoking.
  3. Cook the onion and garlic (3-4 minutes): Add the chopped onion to the skillet and sauté until translucent, about 3 minutes, then stir in the garlic for another minute.
  4. Brown the meat (6-8 minutes): Add the ground meat, breaking it apart with your spatula. Cook until no longer pink, about 6 to 8 minutes. Stir frequently to avoid clumps and ensure even cooking. Remove excess liquid if necessary.
  5. Add seasonings and tomato paste (2 minutes): Sprinkle chili powder, cumin, paprika, salt, and pepper over the meat. Stir in the tomato paste, mixing well to coat the meat evenly.
  6. Simmer with water (5 minutes): Pour in 1/4 cup water, stir, and let the mixture simmer gently until the sauce thickens and clings to the meat, about 5 minutes.
  7. Warm the tortillas (2-3 minutes): Heat tortillas in a dry skillet or microwave them wrapped in a damp paper towel until soft and pliable.
  8. Assemble the tacos (5 minutes): Spoon the meat mixture into each tortilla, sprinkle with cheddar cheese, add lettuce and cherry tomatoes, and finish with a dollop of mild salsa and sour cream if using.

Notes

For gluten-free, use corn tortillas instead of flour tortillas. For dairy-free, skip cheese or use plant-based alternatives. Add veggies finely chopped into meat to increase nutrition without changing flavor. Warm tortillas well to prevent tearing. Adjust chili powder to taste for mildness.
