  • 1 teaspoon vanilla extract
  • Optional: fresh blueberries or chocolate chips

Instructions

  1. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, sugar, salt, and cinnamon for about 2 minutes.
  2. Combine wet ingredients: In a separate bowl, beat eggs until smooth. Add milk, melted butter, and vanilla extract; whisk until combined.
  3. Make the batter: Pour wet ingredients into dry ingredients and gently stir with a spatula until just combined. Batter should be pourable but not runny.
  4. Preheat griddle or skillet over medium heat for about 5 minutes. Test readiness by sprinkling a few drops of water; if they dance and evaporate quickly, it’s ready.
  5. Cook pancakes: Lightly grease the griddle. Pour 1/4 cup batter per pancake. Cook 2-3 minutes until bubbles form and edges set. Flip and cook 1-2 minutes until golden.
