  • 1 to 2 tablespoons olive oil (extra virgin recommended)

  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground coriander
  • 3/4 teaspoon salt, or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon chili powder or cayenne (optional, adjust to heat preference)
  • 1/2 teaspoon lemon zest (optional but recommended)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Drain and rinse one 15-ounce (425g) can of chickpeas thoroughly. Spread them on a kitchen towel or paper towels and pat dry as much as possible.
  3. Toast the cumin seeds in a small dry skillet over medium heat for 1-2 minutes until fragrant and slightly darker. Remove from heat and crush lightly with a mortar and pestle or spice grinder if available.
  4. Transfer the dried chickpeas to a mixing bowl. Add 1 to 2 tablespoons of olive oil and toss to coat evenly.
  5. Mix the spice blend by combining toasted cumin seeds, ground cumin, smoked paprika, garlic powder, ground coriander, salt, black pepper, and optional chili powder or cayenne. Stir well.
  6. Sprinkle the spice mix over the chickpeas and toss thoroughly to coat every chickpea.
  7. Spread the chickpeas in a single layer on a rimmed baking sheet. Use two sheets if needed to avoid crowding.
  8. Roast in the oven for 25 to 30 minutes, shaking or stirring every 10 minutes to promote even crisping. Watch closely towards the end to avoid burning.
  9. Once roasted, remove from oven and sprinkle with lemon zest if using. Let cool on the pan to crisp up further.
