  • 2 tbsp fresh chives, finely chopped
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp lemon juice
  • ½ tsp garlic powder (optional)

  • 1 large English cucumber
  • 8 slices white sandwich bread, crusts removed
  • Butter, softened (optional)

Instructions

  1. Prepare the Herbed Cream Cheese: In a mixing bowl, combine 8 oz softened cream cheese with 2 tbsp chopped chives, 1 tbsp chopped parsley, 1 tsp lemon juice, and ½ tsp garlic powder if using. Season with salt and pepper. Mix well until smooth and evenly blended. This should take about 5 minutes. Taste and adjust seasoning if needed.
  2. Slice the Cucumber: Using a sharp serrated knife or mandoline, cut the cucumber lengthwise into very thin slices, about 1/8-inch (3 mm) thick. This usually yields about 12-15 slices. Lay them flat on a paper towel and lightly sprinkle with salt; let sit for 5 minutes to draw out excess moisture. Then, pat dry with another towel.
  3. Prepare the Bread: Remove the crusts from 8 slices of white sandwich bread. If desired, lightly spread a thin layer of softened butter on each slice to create a moisture barrier and add subtle richness (optional).
  4. Assemble the Sandwiches: Spread a generous layer (about 2 tablespoons) of the herbed cream cheese evenly over 4 slices of bread. Arrange cucumber slices in a single layer on top, slightly overlapping. Cover with the remaining bread slices, butter side down if buttered. Press gently to seal.
  5. Cut and Serve: Cut each sandwich into finger-sized rectangles or traditional triangles. Serve immediately, or cover with a slightly damp cloth and plastic wrap if making ahead. Best enjoyed within 2 hours for optimal freshness.
